I'm amazed that I haven't gained at least five pounds in the last two weeks, with the way we've been eating and slothing. Alas, I probably have illness to thank for it. Ah well. I'm finally out of the woods, but my poor son hasn't really had more than a few bites of food since Wednesday! I'm thinking that he might have still caught the flu, even though we all get the vaccine every year. Blargh. Well, here's hoping that we can all eat well this week...
- Monday - Pizza
- Tuesday - Spicy Pumpkin Soup (recipe I found via Pinterest we're experimenting with this week)
- Wedensday - Basil chicken in Coconut Curry Sauce with veggies and brown rice
- Thursday - miiight just take the kids to go check out light displays and go out for dinner, if everyone is on the up and up...
- Friday - Farfalle with zucchini and tomato cream sauce (from The Pioneer Woman)
- Saturday - Italian Beef Stew and mashed potatoes (this is a delish old Cooking Light recipe)
- Sunday - Chicken Burrito Bowls with Bacon Guacamole and Scallion Pesto (dying to try this recipe Bev Cooks posted last week)
