Last week was a good one for trying new recipes; the 'mojo sauce' that we used to jazz up our beef kebabs was SO simple, and SO delicious. The new chopped salad turned out easy and tasty. And I also experimented with a super easy way to make a tasty peanut sauce for our satay marinated chicken, behold:
We always have this red curry sauce from Trader Joe's on hand and I thought it might make for a good peanut sauce. I just threw equal parts peanut butter and curry sauce together and nuked it in the microwave for 30 seconds to make it easier to stir. It's also good with a little sriracha thrown in, or coconut milk to make it creamier - WIN.
This week's eats:
- Monday - Pizza
- Tuesday - Tortilla Pie (trying this Dinner A Love Story recipe I had marked in Google Reader and I'm starting to go through all of those so I can get moving to a new reader. Sigh.)
- Wednesday - Creamy Indian Cashew Chicken (new irresistible looking recipe from Bev Cooks)
- Thursday - Fish Tacos with Cilantro Lime Crema (an old Cooking Light favorite)
- Friday - Baked Ziti (easy freezer meal, since we saved half the last time we made this recipe)
- Saturday - Seven Flavor Beef with Bok Choy, Carrots and Brown Rice (yes, we'd eat this every weekend, but we're afraid we'd get sick of it that way...)
- Sunday - Garbage Salads (my attempt at a salad they used to make at Blackies in Chicago: hard boiled egg, bacon, artichoke hearts, hearts of palm, avocado, red onion, tomatoes, blue cheese and a Ceasar vinaigrette)
Linking up with Mommy Run Fast and Jill Conyers, as well as Rachel at In No Simple Language - be sure to check out all the great weekly menus!
